July 19 Bircher Muesli
Bircher Muesli Oh my God it's been a year since I wrote in my Blog!! Ouch...do I ever feel sheepish! LOL Well....I have an awesome recipe, if that makes up for my absence? My Aunty Gaye Gaye and her family came to stay with us (from Australia) a few weeks ago and we had such an amazing time! Mark and I couldn't believe we had another whole family living with ours in this tiny house for a week, and we didn’t seem cramped at all! Mind you give it a few more weeks and it might have been a different story. But we really did have a lovely time with them. One weekend we all stayed in Williamsburg. Us at the Williamsburg Inn, Gaye and her family at a Comfort Inn down the street. Now as I've mentioned before, the Williamsburg Inn is our favorite place to stay in the whole world! This was where my darling husband proposed to me (that funny story deserves its OWN Blog one day!) Where we spend all our wedding anniversaries, and at least two weekends each year. Her Royal Highness, Queen Elizabeth II, visited Williamsburg this past June to commemorate America’s 400th Anniversary of Jamestown. (Jamestown was the first original settlement of English settlers in America) The kids, hubby and I stayed in a gorgeous double suite overlooking the Providence Gardens. We had our own separate lounge room, and as usual a huge bathroom that was to die for! LOL The following morning we had, what I must say, was the most scrumptious breakfast I've EVER eaten! (EVEN better than the Crowne Casino in Melbourne, Australia) A smorgasbord of gastronomic delights in which our Inn is famous for...and a new dish which I'd never even heard of.....Bircher Muesli! It was soooooo good, Mark and I must have had at least three bowls each! LOL Which brings me (finally!) to the reason for this Blog! Bircher Muesli!! For those of you who have tried this delicious breakfast comfort food, you'll know why I think it's worthy of its own "Blog Brag"! For those of you who haven’t tried it, you just have to!! Good-Golly-Miss-Molly you haven’t lived until you've tried this breakfast bowl of heaven! So here is the recipe........ Bircher Muesli · Two cups of Rolled Oats (You can also use steel-cut oats) · Two cups of Yoghurt (Flavored, or plain. I use plain) You can also use Milk, but it will give it a much milder taste. · Half a cup of apple juice · One grated apple · One tablespoon of lemon juice Any fresh and dried fruit you have available! Sultanas, raisins, apples (In addition to the grated apple), macadamia nuts, dried apricots (a must!) bananas, fresh berries, figs! Mix all the ingredients together in a large bowl refrigerate for at least twelve hours. Serve it in the morning with a drizzle of honey, toasted almonds and a few spoonfuls’ of whipped cream!!
August 12 Tickly Toads and Bouncy BunniesI feel a little guilty for not writing for a while...but I've got a good excuse..I swear!! LOL
My Dad and Stepmum are arriving Friday night (eleven at night!) and I've been working my katushkus off trying to prepare the house for their three week stay. But now, finally the house looks like it's almost ready! We've painted the front and back porch, ordered a new wicker sofa for the front porch. Painted the outside window trims...thinking about painting the shutters....bought a "Floor Mate" (they are really cool!!) and cleaned all the wood floors, bathrooms and kitchen/laundry, having new kitchen appliances delivered and installed on Monday. Put up new curtains in the guestroom, bought a new bookshelf, rug and side table. Cleaned and scrubbed..and scrubbed and cleaned almost every surface in the house...apart from the ceiling...haven't worked out how to do that yet..any suggestions??LOL More New Guinea Impatiens are now growing and smiling in the front garden. Lauren and I accidentally "dug up" a little hibernating toad yesterday! He was sooooo cute! Lauren tried to make him stay in the front garden bed..but he insisted on making a mad dash-hop every time Lauren turned her back for just a second. Eventually she let him have his way...he's now hiding somewhere in our neighbors’ shrubs. We also had another visitor last weekend! I was on my way out the front door to put some trash out when Mark comes around the corner frantically telling me to come with him right away! I was a bit concerned about what he was going to show me in the yard..Mark has a morbid curiosity with dead animals, neighborhood dogs who poop on our lawn..etc..etc..so Iwas expecting the worst...when I rounded the corner of our driveway....who should be sitting in the middle of my strawberry planter munching away merrily....a widdle brown cutesy furry bunny!!! I squealed out every cutesy wootzy adjective known to Mummies who wuv bunnies...and dashed inside to grab my now protesting (almost three year old) daughter. Her mean ol' Mummy was tearing her away from Sponge Bob!! "I promise...Mummy has something really cool to show you Bethy..come with me outside!!" She glanced at the TV and pouted.."But Spooo Bub Mamma!!" Not wanting her to miss out , I grabbed her and ran out the front door! When Bethy saw our little visitor, she squealed louder than I did! "Oowww Mamma, a bunny is eating your starwboobies!!!" We watched our little breakfast guest for a few minutes...then I stared thinking...the more that little buggar eats in my "strawbooby" planter...the less cuter he looks! He was nibbling off every leaf, flower and berry! So once again. mean ol' Mamma ruins everyone's fun! I shooed the bunny into the back yard, hoping that he would stay there while Bethy and I ran inside to rustle up some more "appropriate" bunny breakfast. So there I was. butt up in the air. rummaging through the fridge. thinking.. "Damn, what do I feed this rabbit??" Broccolli??..nahhh...left-over cheeseburgers ...hmm ...dang, who didn't put the lid on this chocolate topping!!...Uughh sticky brown mess all over the dagone shelf.... "Bethy...what should we feed Mr. Bunny?" She clapped her hands together and jumped up and down... "Carrowts Mamma" In her "oh-so-cute" Wonder Pets, cutesy wootzey voice. Ughhh...duh! Why didn't I think of that! I grabbed the smallest carrot we had and raced out the door. Bethy and I scattered bunny-size pieces of carrot around the planter. Then threw some more pieces in the backyard. but our poor widdwle bunny friend was no-where to be found!!! So anyway, during all this "bunny-fun", I did manage to snap some pics of our furry friend, but unfortunately I cant find my USB Port thingy to upload the photos from my digital camera. I think last time I saw it Gilly was using it as a pacifier...so who knows where it is! Probably in the bottom of the toy box with the TV remote and Lauren's cell phone... July 28 "Mummy..guess what!!?"Last night was a night filled with "Mummy..guess what!!?". My twelve year old..La La (a.k.a Lauren) is currently on vacation with her wonderful grandparents in The Blue Ridge Mountains, at the gorgeous Greenbrier Resort.
Lauren and her grandparents arrived late Wednesday afternoon for the "Wachovia's 2006 Premier Advisors Recognition Conference" for which her Granddad had been awarded recognition from Wachovia's Premier Investment Advisors Program.
Our excited daughter called us late Wednesday night with squeels of..."Mummy..guess what!!?" Aparently Wachovia's opening night at the Greenbrier had been a circus extravaganza!! With clowns, fireworks, jugglers, stilt walkers, cotton candy and all manner of circus gastronomical delights....and if that wasn't cool enough, not one, but FOUR ELEPHANTS!!!
"Mummy...guess what! I just came back from the circus...and I rode an elephant!!" Lauren's news made me giggle! Wow..my baby girl on the back of an elephant! And the first member of our family to ride one at that! I can't wait to see the photos Mom took..and even granddad took a nelly for a spin! LOL
Friday Lauren met some new friends from California, Ohio and North Carolina. These new friends joined her in a scavenger hunt in and around the grounds of the resort. She also went horseback riding around the golf courses with Granddad! They both came back with very sore bottoms! LOL
Friday night they all dined in The Main Dinning Hall. A sit down, five course dinner was a little more than our poor La La could handle.. so she opted for the childrens menu. "Mummy...it was the most cheesiest and juciest cheeseburger I have EVER had!!" She ate a big eight ounce burger, with real cheese with white chocolate cake for desert.
Today she went swimming in the pool with Nanna and Granddad. I think she's also attending an "Acting-out" activity with the teens. I'm sure we'll hear more.."Mummy..guess what!!?"'s tonight when she calls after dinner!!
I'll be sure to post pics ASAP..she comes home Sunday night. July 24 Our Yummy Weekend!! Cornflake-and-Pistachio Crusted Salmon Cakes With Cucumber-Yoghurt Ranch Dressing
Mmmmm we have had such a yummy weekend!! LOL These Salmon Cakes where sooooo good! We had one left over this morning, and I thought I might save for my Mother-in-law for her lunch today....but I looked at that lonely Salmon Cake in my fridge this morning..it was quietly whispering..."eat me..eat me", and I just couldn't say No!!
Serves 4 2 tablespoons corn oil for frying 1/4 cup minced shallots 2 teaspoons minced garlic 1 1/2 teaspoons ground coriander 1 pound salmon fillet, poached and cut into small dice 3/4 cup mayonnaise 1 1/2 teaspoons chopped fresh cilantro 1 1/2 teaspoons chopped fresh tarragon 1 1/2 teaspoons of chopped fresh parsley Old Bay Seasoning to taste 2 teaspoons of fresh lemon juice Salt and freshly ground black pepper to taste 1/2 cup of fresh bread crumbs 3 eggs 1/4 cup milk 4 cups cornflakes, lightly crushed 3/4 cup pistachio nuts, toasted and coarsely ground Flour for dredging Cucumber-Yogurt Ranch Dressing
In a small sauté pan over medium heat, heat the two tablespoons oil and sauté the shallots and garlic until translucent. Add the coriander and sauté until aromatic. Transfer the shallot mixture to a plate or shallow dish and let cool completely. In a medium bowl, combine the salmon, mayonnaise, fresh herbs, Old Bay, and lemon juice, salt, and pepper. Gradually add just enough bread crumbs to make the mixture adhere well. Scoop the mixture into 1/4 cup portions and shape them into cakes. In a shallow bowl, whisk the eggs and milk together. In a second bowl, stir the cornflakes and pistachio nuts together. Dredge the patties in flour and shake of the excess. Dip each patty into the egg mixture, then the cornflake mixture. Place the patties on a baking sheet. In a large cast-iron skillet over medium heat, heat about 1/4 inch of the oil until the surface shimmers. Fry the cakes in batches until they are evenly browned on both sides. Drain on paper towels and keep warm in a low oven until all of the cakes are cooked. Serve at once with the dressing. (They taste even better the next morning for breakfast!! LOL July 17 Your Silly Mama!There's nothing more wonderful first thing in the morning, to open your eyes and see a gorgeous, tiny, giggling face! Children are the most wonderful blessing God could ever give us. Most mothers know...you could have had only half an hour's sleep the entire night...but the second you wake and look upon your gorgeous child....and they smile that special smile that's just yours...your heart melts! You'll love them forever..you'll sit by their side at all hours of the night when they have a bad tummy ache...you'll drive to their school to drop off their lunchbox when they've left it at home...you'll buy them that book they want when you know you just bought them one last week...you'll cut them another slice of birthday cake, but only because she's just so gorgeous smilling at you like that!
Every morning I see my girls, I thank God for giving them to me. And every night before I fall asleep..I thank God again. Their beautiful smiles permeate each of my days with the sweetest sunshine. And each day brings more memories to store in my heart (and my hard drive! LOL)
I was in a children's clothing store the other day, and felt such a pain in my heart to look at the small baby clothes..and to think it wouldnt be much longer and I would never buy clothes this size again. Never have a need to stroll through the baby department and "owww" and "ahhh" at all the gorgeous, tiny outfits. I hold Gwendolyn in my arms and remember when she was so tiny. We would call her "The littlest Griffin that ever there was!" And to us she was! Only six pounds..with the tiniest fingers and toes...and I so wanted one of those photos where the parents hold their newborn in one hand. Know the one? And everyday I looked at her little face and thought, I must take that photo this weekend. But before I knew it...she'd grown too big to take that shot. I watch my children as each milestone passes...comparing one to the other...Bethy was crawling at nine months..Gwen's not quite there yet, but she has four teeth...and Beth didnt at the same age. And all this time my heart aches for them to be tiny babies again.
But while all this heartache fills my silly Mummy heart...Mark reminds me of something...something my heart had made me forget.
One of my biggest dreams is to sit at my dinningroom table when I'm sixty (or so..) and gaze upon my children, and their children. Many friends and family members have thought Mark and I where crazy to have three children. Well...yeah maybe (and I could even agree with them at eight in the morning when they're all screaming..wanting breakfast, juice..the boob! LOL) but what every parent knows..or comes to realise, is that those crazy days of diapers, teething and homework are only with you for such a short time in your life. They will always be your babies..your toddler who holds her breath if you dont pick her up from the floor...your "high maintenence two year old"...and your pre-teen who wont come out of her room all night..
And my babies will ALWAYS be my babies. They are today..and they'll still be my babies when Im sixty and sitting down to Thanksgiving dinner..with their babies!!
So in all the seriousness in my life..Bethy reminds me.. "Your silly Mama!"
