1 carrot, sliced diagonally 1/2 English cucumber 1/2 Red roasted Capsicum (Yanks call 'em Peppers!) Several handfuls of Coz Lettuce 1/2 Mango, cubed 1 handful of cashew nuts 1/2 block of sheep cheese, cut into small cubes and fried in olive oil 2 chicken breasts, rubbed in lemon pepper and pan fried with olive oil 2 hanfuls of blackberries (or raspberries, blueberries) Drizzle papaya and poppy seed dressing over salad and serve
So anyone who's made a salad knows what to do with the above ingredients! The dressing I like to use with any salad that requires fruit is papaya and poppy seed dressing. This one is a great brand..http://www.anniesnaturals.com/Pages/nutrition/poppy-nf.htm Now the fried Sheep Cheese I like to use is this one... This cheese is sooooo cool!!! Its sheep cheese...sounds potentially nasty..but its actually extremely delicious! It tastes like a cross between mozzarella and feta, when you eat it uncooked, which in itself is delicious. But the real beauty of this cheese is its taste when cooked!! Its extremely versatile..you can grill it, fry it (without oil) or just serve it fresh with a salad or sandwich. Instead of melting when it cooks, the cheese actually retains its shape. It browns beautifully and deliciously! You could seriously use this cheese as a meat alternative...I’m sure it would be great for vegetarians! This cheese has a nutty buttery taste when its cooked...really delicious and unlike any other cheese I’ve tried...and believe me, our family knows cheese!!!! LOL The cheese name is "Halloumi" Its made in Cyprus and the company that makes it is called Pittas Dairy Industries LTD http://www.pittas.com I found this cheese at Harris Teeter Supermarket..not sure who else would sell it..but I would hope someone else does because this cheese is really worth trying!
