    Oh my God it's been a year since I wrote in my Blog!! Ouch...do I ever feel sheepish! LOL Well....I have an awesome recipe, if that makes up for my absence? My Aunty Gaye Gaye and her family came to stay with us (from Australia) a few weeks ago and we had such an amazing time! Mark and I couldn't believe we had another whole family living with ours in this tiny house for a week, and we didn’t seem cramped at all! Mind you give it a few more weeks and it might have been a different story. But we really did have a lovely time with them. One weekend we all stayed in Williamsburg. Us at the Williamsburg Inn, Gaye and her family at a Comfort Inn down the street.

      Now as I've mentioned before, the Williamsburg Inn is our favorite place to stay in the whole world! This was where my darling husband proposed to me (that funny story deserves its OWN Blog one day!) Where we spend all our wedding anniversaries, and at least two weekends each year. Her Royal Highness, Queen Elizabeth II, visited Williamsburg this past June to commemorate America’s 400th Anniversary of Jamestown. (Jamestown was the first original settlement of English settlers in America)

      The kids, hubby and I stayed in a gorgeous double suite overlooking the Providence Gardens. We had our own separate lounge room, and as usual a huge bathroom that was to die for! LOL The following morning we had, what I must say, was the most scrumptious breakfast I've EVER eaten! (EVEN better than the Crowne Casino in Melbourne, Australia) A smorgasbord of gastronomic delights in which our Inn is famous for...and a new dish which I'd never even heard of.....Bircher Muesli! It was soooooo good, Mark and I must have had at least three bowls each! LOL Which brings me (finally!) to the reason for this Blog! Bircher Muesli!!

      For those of you who have tried this delicious breakfast comfort food, you'll know why I think it's worthy of its own "Blog Brag"! For those of you who haven’t tried it, you just have to!! Good-Golly-Miss-Molly you haven’t lived until you've tried this breakfast bowl of heaven!

    So here is the recipe........

      Bircher Muesli

    ·                     Two cups of Rolled Oats (You can also use steel-cut oats)

    ·                     Two cups of Yoghurt (Flavored, or plain. I use plain) You can also use Milk, but it will give it a much milder taste.

    ·                     Half a cup of apple juice

    ·                     One grated apple

    ·                     One tablespoon of lemon juice

    Any fresh and dried fruit you have available! Sultanas, raisins, apples (In addition to the grated apple), macadamia nuts, dried apricots (a must!) bananas, fresh berries, figs!

    Mix all the ingredients together in a large bowl refrigerate for at least twelve hours. Serve it in the morning with a drizzle of honey, toasted almonds and a few spoonfuls’ of whipped cream!!

    Tickly Toads and Bouncy Bunnies

     
     
    I feel a little guilty for not writing for a while...but I've got a good excuse..I swear!! LOL

    My Dad and Stepmum are arriving Friday night (eleven at night!) and I've been working my katushkus off trying to prepare the house for their three week stay. But now, finally the house looks like it's almost ready! We've painted the front and back porch, ordered a new wicker sofa for the front porch. Painted the outside window trims...thinking about painting the shutters....bought a "Floor Mate" (they are really cool!!) and cleaned all the wood floors, bathrooms and kitchen/laundry, having new kitchen appliances delivered and installed on Monday. Put up new curtains in the guestroom, bought a new bookshelf, rug and side table. Cleaned and scrubbed..and scrubbed and cleaned almost every surface in the house...apart from the ceiling...haven't worked out how to do that yet..any suggestions??LOL

    More New Guinea Impatiens are now growing and smiling in the front garden. Lauren and I accidentally "dug up" a little hibernating toad yesterday! He was sooooo cute! Lauren tried to make him stay in the front garden bed..but he insisted on making a mad dash-hop every time Lauren turned her back for just a second. Eventually she let him have his way...he's now hiding somewhere in our neighbors’ shrubs.

    We also had another visitor last weekend! I was on my way out the front door to put some trash out when Mark comes around the corner frantically telling me to come with him right away! I was a bit concerned about what he was going to show me in the yard..Mark has a morbid curiosity with dead animals, neighborhood dogs who poop on our lawn..etc..etc..so  Iwas expecting the worst...when I rounded the corner of our driveway....who should be sitting in the middle of my strawberry planter munching away merrily....a widdle brown cutesy furry bunny!!!

    I squealed out every cutesy wootzy adjective known to Mummies who wuv bunnies...and dashed inside to grab my now protesting (almost three year old) daughter. Her mean ol' Mummy was tearing her away from Sponge Bob!!

    "I promise...Mummy has something really cool to show you Bethy..come with me outside!!" She glanced at the TV and pouted.."But Spooo Bub Mamma!!"

    Not wanting her to miss out , I grabbed her and ran out the front door!

    When Bethy saw our little visitor, she squealed louder than I did! "Oowww Mamma, a bunny is eating your starwboobies!!!"

    We watched our little breakfast guest for a few minutes...then I stared thinking...the more that little buggar eats in my "strawbooby" planter...the less cuter he looks! He was nibbling off every leaf, flower and berry! 

    So once again. mean ol' Mamma ruins everyone's fun! I shooed the bunny into the back yard, hoping that he would stay there while Bethy and I ran inside to rustle up some more "appropriate" bunny breakfast.

    So there I was. butt up in the air. rummaging through the fridge. thinking.. "Damn, what do I feed this rabbit??" Broccolli??..nahhh...left-over cheeseburgers ...hmm ...dang, who didn't put the lid on this chocolate topping!!...Uughh sticky brown mess all over the dagone shelf....

    "Bethy...what should we feed Mr. Bunny?"

    She clapped her hands together and jumped up and down...

    "Carrowts Mamma" In her "oh-so-cute" Wonder Pets, cutesy wootzey voice.

    Ughhh...duh! Why didn't I think of that!

    I grabbed the smallest carrot we had and raced out the door.

    Bethy and I scattered bunny-size pieces of carrot around the planter. Then threw some more pieces in the backyard. but our poor widdwle bunny friend was no-where to be found!!!

    So anyway, during all this "bunny-fun", I did manage to snap some pics of our furry friend, but unfortunately I cant find my USB Port thingy to upload the photos from my digital camera. I think last time I saw it Gilly was using it as a pacifier...so who knows where it is! Probably in the bottom of the toy box with the TV remote and Lauren's cell phone...

    "Mummy..guess what!!?"

    Last night was a night filled with "Mummy..guess what!!?". My twelve year old..La La (a.k.a Lauren) is currently on vacation with her wonderful grandparents in The Blue Ridge Mountains, at the gorgeous Greenbrier Resort. 
        Lauren and her grandparents arrived late Wednesday afternoon for the "Wachovia's 2006 Premier Advisors Recognition Conference" for which her Granddad had been awarded recognition from Wachovia's Premier Investment Advisors Program.
        Our excited daughter called us late Wednesday night with squeels of..."Mummy..guess what!!?" Aparently Wachovia's opening night at the Greenbrier had been a circus extravaganza!! With clowns, fireworks, jugglers, stilt walkers, cotton candy and all manner of circus gastronomical delights....and if that wasn't cool enough, not one, but FOUR ELEPHANTS!!!
    "Mummy...guess what! I just came back from the circus...and I rode an elephant!!" Lauren's news made me giggle!  Wow..my baby girl on the back of an elephant! And the first member of our family to ride one at that! I can't wait to see the photos Mom took..and even granddad took a nelly for a spin! LOL
        Friday Lauren met some new friends from California, Ohio and North Carolina. These new friends joined her in a scavenger hunt in and around the grounds of the resort. She also went horseback riding around the golf courses with Granddad! They both came back with very sore bottoms! LOL
       Friday night they all dined in The Main Dinning Hall. A sit down, five course dinner was a little more than our poor La La could handle.. so she opted for the childrens menu. "Mummy...it was the most cheesiest and juciest cheeseburger I have EVER had!!" She ate a big eight ounce burger, with real cheese with white chocolate cake for desert.
        Today she went swimming in the pool with Nanna and Granddad. I think she's also attending an "Acting-out" activity with the teens. I'm sure we'll hear more.."Mummy..guess what!!?"'s tonight when she calls after dinner!!
        I'll be sure to post pics ASAP..she comes home Sunday night.

    Our Yummy Weekend!!

     Cornflake-and-Pistachio Crusted Salmon Cakes With Cucumber-Yoghurt Ranch Dressing

    Mmmmm we have had such a yummy weekend!! LOL These Salmon Cakes where sooooo good! We had one left over this morning, and I thought I might save for my Mother-in-law for her lunch today....but I looked at that lonely Salmon Cake in my fridge this morning..it was quietly whispering..."eat me..eat me", and I just couldn't say No!!

     

    Serves 4

    2 tablespoons corn oil for frying

    1/4 cup minced shallots

    2 teaspoons minced garlic

    1 1/2 teaspoons ground coriander

    1 pound salmon fillet, poached and cut into small dice

    3/4 cup mayonnaise

    1 1/2 teaspoons chopped fresh cilantro

    1 1/2 teaspoons chopped fresh tarragon

    1 1/2 teaspoons of chopped fresh parsley

    Old Bay Seasoning to taste

    2 teaspoons of fresh lemon juice

    Salt and freshly ground black pepper to taste

    1/2 cup of fresh bread crumbs

    3 eggs

    1/4 cup milk

    4 cups cornflakes, lightly crushed

    3/4 cup pistachio nuts, toasted and coarsely ground

    Flour for dredging

    Cucumber-Yogurt Ranch Dressing

     

        In a small sauté pan over medium heat, heat the two tablespoons oil and sauté the shallots and garlic until translucent. Add the coriander and sauté until aromatic. Transfer the shallot mixture to a plate or shallow dish and let cool completely.

        In a medium bowl, combine the salmon, mayonnaise, fresh herbs, Old Bay, and lemon juice, salt, and pepper. Gradually add just enough bread crumbs to make the mixture adhere well. Scoop the mixture into 1/4 cup portions and shape them into cakes.

        In a shallow bowl, whisk the eggs and milk together. In a second bowl, stir the cornflakes and pistachio nuts together.

        Dredge the patties in flour and shake of the excess. Dip each patty into the egg mixture, then the cornflake mixture. Place the patties on a baking sheet.

        In a large cast-iron skillet over medium heat, heat about 1/4 inch of the oil until the surface shimmers. Fry the cakes in batches until they are evenly browned on both sides. Drain on paper towels and keep warm in a low oven until all of the cakes are cooked. Serve at once with the dressing.

    (They taste even better the next morning for breakfast!! LOL

    Your Silly Mama!

     
    There's nothing more wonderful first thing in the morning, to open your eyes and see a gorgeous, tiny, giggling face! Children are the most wonderful blessing God could ever give us. Most mothers know...you could have had only half an hour's sleep the entire night...but the second you wake and look upon your gorgeous child....and they smile that special smile that's just yours...your heart melts! You'll love them forever..you'll sit by their side at all hours of the night when they have a bad tummy ache...you'll drive to their school to drop off their lunchbox when they've left it at home...you'll buy them that book they want when you know you just bought them one last week...you'll cut them another slice of birthday cake, but only because she's just so gorgeous smilling at you like that!
    Every morning I see my girls, I thank God for giving them to me. And every night before I fall asleep..I thank God again. Their beautiful smiles permeate each of my days with the sweetest sunshine. And each day brings more memories to store in my heart (and my hard drive! LOL)
    I was in a children's clothing store the other day, and felt such a pain in my heart to look at the small baby clothes..and to think it wouldnt be much longer and I would never buy clothes this size again. Never have a need to stroll through the baby department and "owww" and "ahhh" at all the gorgeous, tiny outfits. I hold Gwendolyn in my arms and remember when she was so tiny. We would call her "The littlest Griffin that ever there was!" And to us she was! Only six pounds..with the tiniest fingers and toes...and I so wanted one of those photos where the parents hold their newborn in one hand. Know the one? And everyday I looked at her little face and thought, I must take that photo this weekend. But before I knew it...she'd grown too big to take that shot. I watch my children as each milestone passes...comparing one to the other...Bethy was crawling at nine months..Gwen's not quite there yet, but she has four teeth...and Beth didnt at the same age. And all this time my heart aches for them to be tiny babies again.
    But while all this heartache fills my silly Mummy heart...Mark reminds me of something...something my heart had made me forget.
    One of my biggest dreams is to sit at my dinningroom table when I'm sixty (or so..) and gaze upon my children, and their children. Many friends and family members have thought Mark and I where crazy to have three children. Well...yeah maybe (and I could even agree with them at eight in the morning when they're all screaming..wanting breakfast, juice..the boob! LOL) but what every parent knows..or comes to realise, is that those crazy days of diapers, teething and homework are only with you for such a short time in your life. They will always be your babies..your toddler who holds her breath if you dont pick her up from the floor...your "high maintenence two year old"...and your pre-teen who wont come out of her room all night..
    And my babies will ALWAYS be my babies. They are today..and they'll still be my babies when Im sixty and sitting down to Thanksgiving dinner..with their babies!!
    So in all the seriousness in my life..Bethy reminds me.. "Your silly Mama!"
    Yes my darling baby girl...your Mama IS silly! And she loves you with all her heart!!

    Goat Cheese-Stuffed Turkey Burgers With Roasted Red Pepper And Apricot Relish

    I realized its been a while since I added a recipe to my Blog, so here is what we had for dinner last night..
     
    Goat Cheese-Stuffed Turkey Burgers

    This meal was extremely yummy!! And while I usually never eat turkey as a rule, and especially turkey burgers, I would have to admit that I really enjoyed these burgers! And would definitley make them again!! Here's the recipe....
     
    1 1/2 pounds of ground turkey leg meat
    6 tablespoons bread crumbs, toasted in a dry frypan
    1 1/2 tablespoons of freshly squeezed lemon juice
    1 1/2 tablespoons of freshly grated lemon zest
    1 tablespoon of chopped fresh thyme
    1/2 to 1 teaspoon of salt
    Freshly ground black pepper to taste
    6 tablespoons of goat cheese
    6 sandwich size English muffins
    Roasted Red Pepper and Apricot Relish (recipe follows)
     
    This recipe serves six.
    Light a fire in a gas or charcoal grill.
         In a medium bowl, combine the turkey meat, bread crumbs, lemon juice, lemon zest, thyme, salt and pepper. (I like to use fresh sliced bread, blend about four slices in the blender until they become bread crumbs. For this recipe, toast the fresh breadcrumbs in a dry frypan (no oil) and toss them until they become brown) Mush this mix with your hands until its blended well. Feels great dosent it!!! LOL
    Next, divide the mixture into 12 equal portions and press them into four-inch patties.
        Top each of the six patties with one tablespoon of goat cheese. Place a second patty on top and press down the edges to seal the two together. Place the patties on a baking sheet, cover, and refrigerate for one hour.
       Brush each burger with oil. Grill on an oiled rack over a hot fire for about six minutes each side, or until cooked through. Serve on an toasted English muffin, topped with relish!!
     
    Roasted Red Pepper And Apricot Relish
     
    3 tablespoons oil
    1 cup finely chopped red onion
    3 teaspoons minced garlic
    1 cup of red bell peppers, roasted, peeled and finely diced
    1 cup of dried apricots, diced
    1/2 cup of chicken broth
    4 teaspoons of distilled white vinegar
    1 tablespoon of honey mustard
    3 drops of Tabasco Sauce
    Freshly ground pepper to taste
    1 teaspoon of fresh flat leaf parsley
     
       In a heavy, medium saucepan over medium heat, heat the oil and saute the onion and garlic for 1 minute. Add the red peppers, apricots, and broth, and simmer for 5 to 10 minutes.
       Add the vinegar, mustard, and Tobasco. Cook untill most of the liquid has evaporated. Add the pepper
       Serve at either room temperature or chilled. Add the parsley just before serving. Enjoy!!!

    The Story of Tanabata..the seventh day of the seventh month

     

    A long time ago, there was a young man who lived in a small village. One day as he was on his way home from working in the fields, he discovered something amazing: the most beautiful clothes he had ever seen. He wanted the clothes very badly, so he quietly put them in his basket and started on his way.

    Just then, a voice called out, "Excuse me." The boy was startled and said, "What? Did somebody just call me?" A beautiful girl answered, "Yes, I did. Please give back my robe of feathers. I live in heaven, and I just came down to this pond to take a bath. Without my robe of feathers, I can't go back."

    The girl looked as though she were about to cry, but the boy pretended not to know and answered, "Robe of feathers? I don't know anything about that." Unable to go back to heaven, the goddess was forced to remain on earth. She began to live with the young man.

     

    The goddess's name was Tanabata. Tanabata and the young man got married and were living together happily. One day several years later, though, while the young man was working in the fields, Tanabata found her robe of feathers hidden between two beams in the ceiling. "I knew it. He's been hiding it," she thought to herself. She put on the robe of feathers and right away began to feel like the goddess she had once been.

     

     

    That evening when the young man came home, he was surprised to see Tanabata wearing the robe of feathers, standing in front of the house. Tanabata began rising up toward heaven and called out to the young man, "If you love me, weave a thousand pairs of straw sandals and bury them around the bamboo tree. If you do that, we'll be sure to see each other again. Please do this. I'll be waiting for you." Tanabata rose up higher and higher and returned home to heaven.

     

     

    The young man was very sad, but he knew what to do. On the very next day he began making straw sandals. He continued weaving them day and night. At last he finally finished making his last pair and buried them all around the bamboo tree.

    Right away the bamboo tree began to get bigger and bigger, and it grew higher and higher into the sky. The young man immediately began climbing the tall bamboo tree. He climbed higher and higher until he was almost able to reach heaven. But because he had wanted to see Tanabata with all his heart, he had hurried when making the straw sandals and had actually made only 999 pairs. The tree stopped one step short, and the young man's hand could not reach heaven.

    "Hey! Tanabata! Tanabata!" the young man cried out to heaven. "Oh, it's you!" Tanabata exclaimed. She extended her hand to the young man and pulled him over the clouds. "Tanabata, I missed you so much," the young man said. The two of them were overjoyed to see each other once again.

     

    Tanabata's father was not happy that she had married a man from the world below. He gave the young man hard work to do, hoping to make him miserable. "You'll guard the melon field for three days and three nights," he said. Watching the melon field made the young man extremely thirsty, but if he ate one of the melons, it was said that something terrible would happen. Tanabata told him, "You absolutely cannot eat one of those melons."

    But as the three days went by, the young man grew thirsty and became unable to bear it any longer. He reached for a melon. The instant he did, water burst forth from the fruit and became a flowing river. "Darling!" "Tanabata!" In an instant the two were pulled apart from each other.

    The two lovers looking across the river at each other became the stars Altair and Vega. Tanabata's father allows them to meet, but only once a year, on the night of July 7. To this day these two stars face each other across the Milky Way, shining brightly.

    Tomorrow is also the Japanese celebration of Tanabata, The Star Festival!!
    Every year on the seventh day of the seventh month,  Tanabata is celebrated by the meeting of Orihime  and  Hikoboshi . The Milky Way, a river made from stars that cross the sky,  seperate these two lovers and they are able to meet and be together only one night a year...on MY birthday! , the seventh of July!!
    Japanese custom on this very romantic day, is to write a wish down on a piece of paper  tanzaku (短冊, small pieces of paper)and tie it to bamboo. The bamboo and decorations are often set float on a river or burned after the festival, around midnight or on the next day. This resembles the custom of floating paper ships and candles on rivers during Obon. Many areas in Japan have their own Tanabata customs, which are mostly related to local Obon traditions.

    Who I am..

    I'm going to say something that my American family may find a little startling..and I will certainly understand that they may not understand.....but I've never felt patriotic towards America. I don't apologize for saying this..simply because its true. I was born in Australia..I'm an Australian citizen, Ive lived there for twenty five years of my life. Im the first daughter of an Englishman..who later became an Australian citizen..which makes me more "English" that most people! LOL... and my first daughter, Lauren was born in Australia. She is an Australian citizen also.
    I will never become an American citizen. I have no desire to do so because Im not American. I have two daughters who are American citizens, and I am proud that they are, because I love them dearly..and because their father is an American citizen. The American, and Australian government have produced a law that states that if I wanted to become an American citizen, I have to give up my Australian citizen ship entirely, to become an American citizen. Decades ago, I would have been permitted to have dual citizenship, which I may have considered...but now of course this is not the case.
    I am not certain of the reasons behind this law. Maybe its something to do with taxes...who knows. It just makes me sad to feel that a country can force upon its "people" such a law. Dont get me wrong, Im grateful to be permitted to live with my husband, to be allowed to marry him, have children with him and to be allowed to be recognized as an American "resident". Mark and I had to go through tremendous emotional hardships for me to be allowed to come to America to live with him. If it wasnt for his loving parents, I probably wouldnt be here today.
    So with tomorrow being Independence Day...I contemplate my place in the world. Living as an Australian citizen in America. I moved to America to be with my wonderful husband. The past few years have been a struggle for me to become use to living in a different country, but slowly Ive adjusted and in some regard, become fond of America. And today, even surprised myself when I read a blog on someone elses website relaiting to Americans. I actually became teary..and I admit...a little paitriotic.....

    So an Australian dentist wrote an editorial the following day to let everyone know what an American is, so they would know when they found one. (Good one, mate!!!!)
     
     
    "An American is English, or French, or Italian, Irish, German, Spanish, Polish, Russian or Greek. An American may also be Canadian, Mexican, African, Indian, Chinese, Japanese, Korean, Australian, Iranian, Asian, or Arab, or Pakistani or Afghan.
     
     
    An American may also be a Comanche, Cherokee, Osage, Blackfoot, Navaho, Apache, Seminole or one of the many other tribes known as native Americans.
     
     
    An American is Christian, or he could be Jewish, or Buddhist, or Muslim.

    In fact, there are more Muslims in America than in Afghanistan. The only difference is that in America they are free to worship as each of them chooses.

     
     
    An American is also free to believe in no religion. For that he will answer only to God, not to the government, or to armed thugs claiming to speak for the government and for God.
     
     
    An American lives in the most prosperous land in the history of the world.

    The national symbol of America, The Statue of Liberty, welcomes your tired and your poor, the wretched refuse of your teeming shores, the homeless, tempest tossed. These in fact are the people who built America.
     
     
    Some of them were working in the Twin Towers the morning of September 11, 2001 earning a better life for their families. It's been told that the World Trade Center victims were from at least 30 different countries, cultures, and first languages, including those that aided and abetted the terrorists.
     
     
    So you can try to kill an American if you must. Hitler did. So did General Tojo, and Stalin, and Mao Tse-Tung, and other blood-thirsty tyrants in the world. But, in doing so you would just be killing yourself. Because Americans are not a particular people from a particular place. They are the embodiment of the human spirit of freedom. Everyone who holds to that spirit, everywhere, is an American.

    Shrimp on the barbie

     This yummy meal was Friday night's dinner. Now...before I go any further...allow me to clarify one fact....Australians have not..nor will they EVER.. THROW A SHRIMP ON THE BARBIE!!!!!
    This is a common missconception brought about by American propaganda in an attempt to....  hehehehe...nah Im just kiddin'. No..Australian's dont put shrimp on the barbie.
     
    Shrimp on the barbie" is an often-quoted phrase that originated in 1986 in a series of television commercials by the Australian Tourism Commission starring Paul Hogan. It has been popularly used since (such as in the film Dumb & Dumber) to make reference to Australia.

    The full line is often quoted as "Throw another shrimp on the barbie" or "Put another shrimp on the barbie." However, the actual quote spoken by Hogan is "I'll slip an extra shrimp on the barbie for you," making it a classic example of a misquotation.

    "Barbie" is Australian slang for "barbecue," and the phrase often invokes images of a fun social gathering under the sun. However, Australians invariably use the term "prawn" rather than "shrimp." As the commercial was commissioned for broadcast in the United States, the change was probably made to limit confusion.

    Aussie Chicken Salad with fried sheep cheese

    Aussie Chicken, Mango and Blackberry Salad
     
     
     

    This recipe isn’t necessarily an Australian one...but the general idea of adding fresh fruit, and generally fresh healthy ingredients is quintessentially Australian. This salad basically consisted of....

     

    1 carrot, sliced diagonally

    1/2 English cucumber

    1/2 Red roasted Capsicum (Yanks call 'em Peppers!)

    Several handfuls of Coz Lettuce

    1/2 Mango, cubed

    1 handful of cashew nuts

    1/2 block of sheep cheese, cut into small cubes and fried in olive oil

    2 chicken breasts, rubbed in lemon pepper and pan fried with olive oil

    2 hanfuls of blackberries (or raspberries, blueberries)

    Drizzle papaya and poppy seed dressing over salad and serve

     

     

     

    So anyone who's made a salad knows what to do with the above ingredients! The dressing I like to use with any salad that requires fruit is papaya and poppy seed dressing. This one is a great brand..http://www.anniesnaturals.com/Pages/nutrition/poppy-nf.htm 

    Now the fried Sheep Cheese I like to use is this one...

    This cheese is sooooo cool!!! Its sheep cheese...sounds potentially nasty..but its actually extremely delicious! It tastes like a cross between mozzarella and feta, when you eat it uncooked, which in itself is delicious. But the real beauty of this cheese is its taste when cooked!! Its extremely versatile..you can grill it, fry it (without oil) or just serve it fresh with a salad or sandwich. Instead of melting when it cooks, the cheese actually retains its shape. It browns beautifully and deliciously! You could seriously use this cheese as a meat alternative...I’m sure it would be great for vegetarians! This cheese has a nutty buttery taste when its cooked...really delicious and unlike any other cheese I’ve tried...and believe me, our family knows cheese!!!! LOL The cheese name is "Halloumi" Its made in Cyprus and the company that makes it is called Pittas Dairy Industries LTD http://www.pittas.com I found this cheese at Harris Teeter Supermarket..not sure who else would sell it..but I would hope someone else does because this cheese is really worth trying!

    Lauren's Graduation

    Lauren graduated from Elementary School on the 14th of June. Following a Graduation ceremony at her school (where she received many awards!) we embarked on a cruise with all the graduates, teachers and parents. And let me tell you.....was THAT ever a hilarious experience!! After her school graduation we rushed home through the pooring rain (reminents of Hurricane Ariana..or something..) to meet our baby sitter who was to take care of Gilly and Bethy while we "cruised" around the Elizabeth river.

    Once the babies where taken care of, we raced downtown to meet up with the ship. We made it with not a minute to spare... the very last family to get on the boat! After climbing up some very slippery stairs..and Mark having a run in with a really rude "cruise director" type guy...we arrived at the "Observation Deck" of what we later came to dub....."The cruise ship from hell"!!! LOL

    This cruise ship must have been the most unorganized event we have ever been to. Unfortunatley because we where so late arriving, and also because the cruise ship allowed all its guest to sit wherever they liked.....all the seats seemed to be taken!! None of the staff members seemed to want to help us find seats...and to top it all off..the only place we could really stand was right beside the buffet...which anoyed the heck out of the kitchen staff, they kept telling us to MOVE!!

    I was getting so furious and about to just leave when....get this...the DJ shines a spotlight on us and announces to the entire floor that we needed seats!! God..poor Lauren was sooooo embarased! He suggested for the people at the tables to put up their hands if they had a spare seat at their table...yeah that was gunna work...then we'd all be sitting at seperate tables! Luckly a waitress came to our rescue and found us a small table by the window....which thankfully turned out to be one of the better places to sit. So for twenty dollars per person..we where served chicken nuggets, corn dogs and cookies for desert!!! This place was making a hefty profit!!! And not only that, we where only allowed one soda per person...if we wanted more drinks, we had to pay extra for them!! LOL I should of taken a photo of THAT meal!!! He he he!!!

     

    So once we settled in...and i calmed down from my mad rampage, things seemed to progress nicely. Lauren was having a wonderful time with her friends, taking lots of photos..and walking around with the video camera. We sat down to eat our "school cafeteria" food and our very small diet cokes...and watched on as the kids danced the Electric Slide (In MY day...wasnt it called The Bus Stop??)..then they went on to do The Conga.....

     

    So onto a happier....and more hilarious note...once we had finished with the cruise and returned back to the city, we then had the task of trying to get back to the parking garage...while still in the middle of a huge rainstorm! I told Mark I'd go and get the car and drive it back to the marina (where the cruise ship was docked..and where Mark and Lauren would wait for me) Now i must tell you.... Our city usually floods at the first sign of rain....this is due to the fact that we are surrounded by rivers and and a large bay. So when we do get rain, there isnt anywhere for the water to go...especially during high tide! Now we happened to have a high tide on Wednesday...so coupled with the fact that we had reminents of a hurricane and torrential downpour...the city in most low laying parts was under at least a foot of water....probably more in some parts. So needless to say my journey back to the car was in a word....WET!!! I had to take off my shoes to wade through "ankle deep" puddles...which was kind of fun in a way! Made me feel like a little kid again! So I made my way to the parkinglot... shoes, parking ticket and twenty bucks in one hand...umbrella in the other. Only problem was... apart from being semi drenched....I had forgotten the car keys!!!!

     

    What made it worse was the fact I didnt realise this until I actually made it all the way to the parking garage! Uuugghh.. so I turned around and ran back to the marina to retrieve the keys from my laughing husband! While all this was going on...the parking ticket in my hand was also getting drenched..and breaking apart into pieces...and then to make it so much more hilarious...I suddenly realised my twenty bucks for parking was missing!!!!

     

    So to cut this way-too-long story short....I found my twenty dollar bill floating in a nice deep puddle...retreived it and ran back to the car for the second time.

    MAN!!!! What a DAY!!! But despite all the drama's...Mark and I were so very proud of Lauren! She has worked so hard these past six years...and it brought several tears to my eyes today to see the beautiful woman she is growing to be...so gorgeously glamorous...yet still my baby girl...breaks my heart everyday to see her grow up before my eyes!

     

    Time flies by way too quickly........

     

     

    Gardening and Gyoza!!

    Well....Ive just come in from the garden ...all sweatty and dirty! Feels like there's a thousand tiny bugs crawling all over me!! UUgghhh I hate it! I'll probably find damn chiggers attached to me tomorrow! So gross!
    So anyway...something got acomplished today at least. The garden is "dead dafodill" and weed free...all ready for new flowers tomorrow! Yaaayyy...so exciting! We have a massive Mulberry tree in our front yard that acts as an umbrella to our yard when it rains...really cool..and kind of surreal at the same time. When it rains you can stand under that tree and watch the rain pour down in the neighbours yard and not get more than a drop on your shoulder. Unfortunatley, it also blocks a great deal of the sun, so I have to plant shrubs and plants that dont need sunlight to grow. Maybe i could plant some rocks??? Anyone got any suggestions as to a shade loving plant?
     
    Now to last night's dinner...
     
     
               Grilled chicken Gyoza with Asian Salad
     
    This Gyoza (or Pot Stickers) is relatively simple to make....maybe a llittle time consuming, so plan at least 30 minutes preparation time. Williams and Sonoma has a great "Dumpling Mold" that makes the job of making the Gyoza sooo much easier!! And they come out perfect everytime! If your serving just Gyoza with a side salad,  usually use roughly half a chicken breast per person. So this recipe is for four people...
     
     
                        Two Chicken breasts
                        1/4 cup of dried Shitake mushrooms
                        1 1/2 cups og Nappa Cabbage
                        1/2 teaspoon salt
                        1 tablespoon each of light soy sauce
                           and Asian sesame oil
                        1 1/2 teaspoons of Chinese rice vinegar
                        1 1/2 teaspoons of freshly peeled and minced ginger
                        1 clove garlic, minced
                        1/2 cup ( 3/4 oz / 20 g) minced fresh garlic chives
                        1 1/2 tablespoons of cornstarch (cornflower)
                        1/4 teaspoon of white pepper
                        45 thin, round wonton wrappers
                        4 tablespoons (2fl oz / 60ml) peanut oil
                        1 cup (8 fl oz / 250 ml) low-sodium chicken broth
                        Good quality Japanese Gyoza dipping sauce
     
    Soak the dried mushrooms in warm water to cover for 30 minutes. Drain and remove the stems and then mince the caps
     
    Place the chicken breasts in Glad wrap and pound them flat with a rolling pin, to roughly 1/4 of an inch thick. Grill them both over an open flame grill for around five minutes each side...or untill the centers are slightly pink (but NOT raw!) Chop the chicken into very small cubes (around 1/2 centimeter / 1/8th inch square) Remember...these pieces have to go inside the wonton wrappers...so they need to be small...but not minced.
     
    In a large bowl toss together chopped cabbage and salt and let stand for 30 minutes to leach out the water from the cabbage.Using your hands, wring out as much of the water from the cabbage as you can. I find it more effective to use a good thick paper towel to wrap a hand-full of cabbage at a time and then squeeze out the water.
    Discard the water and place the cabbage in a large clean bowl. Add the mushrooms, chicken, garlic chives, soy sauce, sesame oil, rice wine, ginger, garlic, cornstarch, and white pepper and, using a rubber spatula, mix vigorously to combine the ingredients well.
     
    To fill each Gyoza, place a wonton wrapper on a work surface (or use the Dumpling Mold) and brush the edges with water; keep the other wrappers covered with a damp cloth until your ready to work with them (so they dont dry out). Place 1 teaspoon of filling in the center of  each wrapper, fold the wrapper in half to enclose the filling, and pleat the outer edge. Place the finished Gyoza on a lightly floured baking sheet. Repeat with the remaining filling and wrappers.
     
    Pre-heat the oven to 250 (F) (120 C) In a large non-stick frypan over medium high heat, heat 1 tablespoon of the peanut oil. Add 10-12 Gyoza, flat bottom down and in a single layer. Sear until golden brown on both sides, 3-4 minutes. Pour 1/4 cup of the broth into the pan, cover, and let steam until all the broth evaporates, the Gyoza's should be tender, but still firm, and the filling cooked through, 4-5 minutes. Transfer to a platter, cover with aluminum foil, and keep warm in the oven. Cook the remaining Gyoza and broth in three or so batches.
     
    Serve the Gyoza hot, with Gyoza dipping sauce.....and enjoy!!!

    06/06 Rib Eye Steak with roast potatoes....

     
    Monday night's dinner consisted of rib eye steak (in Australia
    we call it "Scotch Fillet Steak") with cottage style roast potatoes with sour cream and green onion...and a baby greens salad with blue cheese dressing. My "Grill Chef Extrodinaire" (aka..my darling hubby..Mark) grilled our lovely thick Costco steaks on our outdoor grill...and as always he grilled them to perfection! Oishii! In fact they where so good Bethany asked for seconds!
    Not much else to report for today.....another sad and wet day outside. Shikke ga arimasu...Ame ga futteimasu..Atsui!!
    Pooring down with rain, hot and very humid!!
    Dosent look like I'll be gardening!!! Bummer..
